Thai Mango Sticky Rice
This classic Thai dessert is a delicious combination of sweet mango and sticky rice. The creamy coconut milk and fragrant jasmine rice make this a truly unique and flavorful treat.
– 2 cups jasmine rice
– 2 cups coconut milk
– 1/4 cup sugar
– 1/2 teaspoon salt
– 2 ripe mangoes
1. Rinse the jasmine rice in a fine mesh strainer until the water runs clear.
2. Place the rice in a medium saucepan and add the coconut milk, sugar, and salt.
3. Bring the mixture to a boil over medium-high heat, stirring occasionally.
4. Reduce the heat to low and cover the pan. Simmer for 15 minutes, or until the rice is tender.
5. Remove the pan from the heat and let the rice sit, covered, for 10 minutes.
6. Peel and slice the mangoes.
7. Serve the sticky rice in individual bowls, topped with the mango slices.
