Mini Blueberry Galettes

Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup cold butter, cubed
– 1/2 cup cold water
– 2 cups fresh blueberries
– 1/4 cup sugar
– 2 tablespoons cornstarch
– 1 teaspoon lemon juice
– 1 egg, beaten
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine flour and salt.
3. Cut in butter until mixture resembles coarse crumbs.
4. Gradually add water, stirring with a fork until dough forms a ball.
5. Divide dough into 8 equal pieces and roll each piece into a 6-inch circle.
