The Best Chicken Enchiladas
These chicken enchiladas are packed with flavor and are sure to be a hit with the whole family. The combination of chicken, cheese, and enchilada sauce makes for a delicious and comforting meal.
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 cups cooked, shredded chicken
– 1 (10-ounce) can enchilada sauce
– 1 (4-ounce) can diced green chiles
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1/2 teaspoon salt
– 8 (6-inch) flour tortillas
– 2 cups shredded Mexican cheese blend
1. Preheat oven to 350°F.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
3. Add chicken, enchilada sauce, green chiles, chili powder, cumin, and salt. Simmer for 5 minutes.
4. Grease a 9×13-inch baking dish.
5. Place about 1/3 cup of the chicken mixture in the center of each tortilla. Roll up and place seam-side down in the baking dish.
6. Pour remaining enchilada sauce over the top of the enchiladas. Sprinkle with cheese.
7. Bake for 20 minutes, or until cheese is melted and bubbly.
