– 1 onion, diced
– 2 cloves garlic, minced

– 1 cup cooked quinoa
– 1 can black beans, drained and rinsed
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1/2 teaspoon paprika
– 1/4 teaspoon cayenne pepper
– Salt and pepper, to taste
– 1/4 cup fresh cilantro, chopped


1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the mushrooms, bell pepper, and zucchini and cook until softened, about 5 minutes.
4. Add the cooked quinoa, black beans, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir to combine.
5. Cook for an additional 5 minutes, stirring occasionally.
6. Remove from heat and stir in the cilantro.
7. Serve warm.
