Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup (2 sticks) butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract

  5. Drop the dough by rounded tablespoons onto the prepared baking sheets, about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
