Birria Tacos

Birria tacos are a traditional Mexican dish that is made with a flavorful stewed meat, usually beef or goat, and served in a corn tortilla. The tacos are often topped with onions, cilantro, and a spicy salsa. This recipe is a delicious way to enjoy this classic dish.

Ingredients:

– 2 pounds beef chuck roast
– 2 tablespoons olive oil
– 1 onion, diced
– 4 cloves garlic, minced
– 2 tablespoons chili powder
– 1 teaspoon ground cumin
– 1 teaspoon dried oregano
– 1 teaspoon ground coriander
– 1 teaspoon smoked paprika
– 1 teaspoon ground cinnamon
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 cups beef broth
– 12 corn tortillas
– 1/2 cup chopped cilantro
– 1/2 cup diced onion
– 1/2 cup salsa

Instructions:

1. Heat the olive oil in a large pot over medium-high heat.
2. Add the beef chuck roast and cook until browned on all sides, about 5 minutes.
3. Add the diced onion and garlic and cook until the onion is softened, about 5 minutes.
4. Add the chili powder, cumin, oregano, coriander, paprika, cinnamon, salt, and pepper and stir to combine.
5. Pour in the beef broth and bring to a boil.
6. Reduce the heat to low and simmer, covered, for 2 hours, stirring occasionally.
7. Remove the beef from the pot and shred with two forks.
8. Return the shredded beef to the pot and simmer for an additional 30 minutes.
9. Heat a large skillet over medium-high heat.
10. Add a corn tortilla to the skillet and cook until lightly browned, about 1 minute per side.
11. Repeat with the remaining tortillas.
12. To assemble the tacos, place a few tablespoons of the beef mixture in each tortilla and top with cilantro, onion, and salsa.
