Mango Chicken (Indian Curry)

– 2 tablespoons vegetable oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground ginger
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon garam masala
– 1 teaspoon turmeric
– 1/2 teaspoon cayenne pepper
– 1/2 teaspoon salt
– 2 boneless, skinless chicken breasts, cut into cubes
– 1 cup diced mango
– 1/2 cup coconut milk
– 1/4 cup chopped fresh cilantro
1. Heat the oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the ginger, cumin, coriander, garam masala, turmeric, cayenne pepper, and salt and cook for 1 minute.
4. Add the chicken and cook until lightly browned, about 5 minutes.
5. Add the mango and coconut milk and bring to a simmer.
