Chinese Curry Chicken

Ingredients:
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon curry powder
- 1/2 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 1 (14 ounce) can coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes.
- Add the onion, garlic, and bell pepper and cook until the vegetables are softened, about 5 minutes.
- Add the ginger, turmeric, cumin, coriander, curry powder, and cayenne pepper and cook for 1 minute.
- Add the tomatoes and coconut milk and bring to a simmer. Reduce the heat to low and simmer for 15 minutes.
