Vegan Goulash

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced

- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (12 ounce) package vegan beef crumbles
- 1/2 cup vegetable broth
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell peppers, paprika, cumin, oregano, salt, and pepper. Cook for another 5 minutes.
