Vegan Stuffed Shells
This vegan stuffed shells recipe is a delicious and easy-to-make dinner that is sure to please everyone. It is filled with a flavorful vegan ricotta cheese and spinach filling, and topped with a delicious marinara sauce. This dish is sure to be a hit with vegans and non-vegans alike!
Ingredients:
- 1 package of jumbo shells
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 package of frozen spinach, thawed and drained
- 1 package of vegan ricotta cheese
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of nutmeg
- 1/2 cup of vegan parmesan cheese
- 1 jar of marinara sauce
Instructions:
- Preheat oven to 375 degrees F.
- Cook the jumbo shells according to package instructions.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the spinach and cook until heated through, about 3 minutes.
- In a large bowl, combine the vegan ricotta cheese, salt, pepper, nutmeg, and vegan parmesan cheese. Add the cooked spinach mixture and stir to combine.
- Spread 1/2 cup of the marinara sauce in the bottom of a 9×13 inch baking dish.
- Fill each cooked shell with the ricotta cheese mixture and place in the baking dish. Top with the remaining marinara sauce.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes.
- Serve warm.
