Vegan Stuffed Shells

This vegan stuffed shells recipe is a delicious and easy-to-make dinner that is sure to please everyone. It is filled with a flavorful vegan ricotta cheese and spinach filling, and topped with a delicious marinara sauce. This dish is sure to be a hit with vegans and non-vegans alike!

Ingredients:

  • 1 package of jumbo shells
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 package of frozen spinach, thawed and drained
  • 1 package of vegan ricotta cheese
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg
  • 1/2 cup of vegan parmesan cheese
  • 1 jar of marinara sauce

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Cook the jumbo shells according to package instructions.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the spinach and cook until heated through, about 3 minutes.
  5. In a large bowl, combine the vegan ricotta cheese, salt, pepper, nutmeg, and vegan parmesan cheese. Add the cooked spinach mixture and stir to combine.
  6. Spread 1/2 cup of the marinara sauce in the bottom of a 9×13 inch baking dish.
  7. Fill each cooked shell with the ricotta cheese mixture and place in the baking dish. Top with the remaining marinara sauce.
  8. Cover with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes.
  10. Serve warm.
