Strawberry Oatmeal Crumble Bars

– 2 cups all-purpose flour
– 1 cup rolled oats
– 1 cup light brown sugar
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup (2 sticks) unsalted butter, melted
– 2 cups fresh strawberries, diced
– 1/2 cup granulated sugar
– 2 tablespoons cornstarch


1. Preheat oven to 350°F. Grease a 9×13-inch baking pan with butter or cooking spray.

2. In a medium bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, and salt.

3. Add the melted butter and stir until the mixture is crumbly.

4. Reserve 1 cup of the crumb mixture and set aside.

5. Press the remaining crumb mixture into the bottom of the prepared pan.

6. In a separate bowl, combine the strawberries, granulated sugar, and cornstarch.

7. Spread the strawberry mixture over the crust.

8. Sprinkle the reserved crumb mixture over the top.

9. Bake for 35-40 minutes, or until the top is golden brown.

10. Let cool before cutting into bars.
