Thai Red Curry Noodle Soup

Ingredients:

– 2 tablespoons vegetable oil
– 2 tablespoons red curry paste
– 2 cloves garlic, minced
– 1 teaspoon grated fresh ginger
– 1 can (14.5 ounces) coconut milk
– 2 cups vegetable broth
– 2 tablespoons fish sauce
– 2 tablespoons brown sugar
– 1 red bell pepper, diced
– 1 cup sliced mushrooms
– 1/2 cup bamboo shoots
– 1/2 cup sliced carrots
– 1/2 cup snow peas
– 8 ounces rice noodles
– 1/4 cup chopped fresh cilantro

Instructions:

1. Heat the oil in a large pot over medium heat. Add the curry paste, garlic, and ginger and cook, stirring, for 1 minute.

2. Add the coconut milk, vegetable broth, fish sauce, and brown sugar and bring to a simmer.

3. Add the bell pepper, mushrooms, bamboo shoots, carrots, and snow peas and simmer for 5 minutes.

4. Add the rice noodles and simmer for an additional 5 minutes.

5. Serve the soup garnished with cilantro. Enjoy!
