Skillet Chicken and Mushroom Wine Sauce


– 4 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 1 onion, diced
– 8 ounces mushrooms, sliced
– 2 cloves garlic, minced
– 1/2 cup white wine
– 1/2 cup chicken broth
– 1 teaspoon dried thyme
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 2 tablespoons chopped fresh parsley


1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken breasts and cook for 5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

3. Add the onion and mushrooms to the skillet and cook for 5 minutes, stirring occasionally.

4. Add the garlic and cook for 1 minute.

5. Pour in the white wine and chicken broth and bring to a simmer.

6. Add the thyme, salt, and pepper and stir to combine.

7. Return the chicken to the skillet and simmer for 10 minutes.

8. In a small bowl, whisk together the butter and flour until smooth.

9. Add the butter mixture to the skillet and stir to combine. Simmer for 5 minutes, or until the sauce has thickened.

10. Serve the chicken and sauce over cooked rice or pasta, garnished with fresh parsley. Enjoy!
