Chinese Green Onion Pancake
Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup boiling water
– 2 tablespoons sesame oil
– 2 tablespoons vegetable oil
– 2 bunches green onions, chopped
Instructions:
1. In a large bowl, mix together the flour and salt.
2. Slowly add the boiling water and stir until a dough forms.
3. Knead the dough for 5 minutes, then cover and let rest for 30 minutes.
4. Divide the dough into 8 equal pieces and roll each piece into a thin circle.
5. Brush each circle with sesame oil and sprinkle with the chopped green onions.
6. Roll each circle up like a jelly roll and then coil it into a spiral.
7. Flatten the spiral and roll it out into a thin circle.
8. Heat a large skillet over medium-high heat and add the vegetable oil.
9. Place the pancake in the skillet and cook for 2-3 minutes per side, until golden brown.
10. Serve hot with soy sauce or your favorite dipping sauce. Enjoy!
