Chicken & Mushroom Risotto
This Chicken & Mushroom Risotto is a creamy and comforting dish that is sure to please. The combination of mushrooms, chicken, and risotto makes for a delicious and filling meal.
Ingredients:
* 2 tablespoons olive oil
* 1 onion, diced
* 2 cloves garlic, minced
* 8 ounces mushrooms, sliced
* 1/2 teaspoon dried thyme
* 1/2 teaspoon dried oregano
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 2 cups Arborio rice
* 6 cups chicken broth
* 1/2 cup white wine
* 2 cups cooked chicken, diced
* 1/2 cup Parmesan cheese, grated
* 2 tablespoons butter
* 2 tablespoons fresh parsley, chopped
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the mushrooms, thyme, oregano, salt, and pepper and cook until the mushrooms are softened, about 5 minutes.
4. Add the Arborio rice and stir to combine.
5. Add the chicken broth and white wine and bring to a boil.
6. Reduce the heat to low and simmer, stirring occasionally, until the rice is cooked through, about 20 minutes.
7. Add the cooked chicken and Parmesan cheese and stir to combine.
8. Remove from the heat and stir in the butter and parsley.
9. Serve warm.
