Mexican Picadillo

Ingredients:
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1/2 cup water
- 2 potatoes, peeled and diced
- 1/4 cup chopped fresh cilantro
Instructions:
- In a large skillet over medium-high heat, cook the ground beef until it is no longer pink. Drain off any excess fat.
- Add the onion, garlic, bell pepper, and jalapeno pepper to the skillet and cook until the vegetables are softened, about 5 minutes.
- Stir in the cumin, chili powder, oregano, paprika, salt, black pepper, and cayenne pepper. Cook for 1 minute.
- Add the diced tomatoes, tomato sauce, and water. Stir to combine.
- Add the potatoes and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.
- Stir in the cilantro and cook for an additional 5 minutes.
- Serve hot.
