The ingredient of Tomato, garlic & bread soup

  1. 100g (about 2 slices) crusty Italian bread, thickly sliced
  2. 2 tablespoons olive oil
  3. 1 brown onion, chopped
  4. 3 garlic cloves, crushed
  5. 500ml (2 cups) Massel vegetable liquid stock
  6. 1 400g can diced tomatoes
  7. Salt & ground black pepper, to taste
  8. 1/4 cup coarsely chopped fresh continental parsley

The instruction how to make Tomato, garlic & bread soup

  1. Preheat oven to 180u00b0C. Remove the crusts from the bread and cut into 1cm squares. Place on a baking tray and cook in preheated oven for 6-8 minutes or until dry and light golden in colour.
  2. Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, for 2 minutes or until it softens slightly. Add the garlic and cook, stirring, for 1 minute. Add the stock and tomatoes, increase heat to high and bring to the boil. Reduce heat to low and simmer, covered, stirring occasionally, for 5 minutes. Taste and season with salt and pepper. Stir in the toasted squares of bread and parsley, and serve immediately
