Raspberry Crumb Bars

These Raspberry Crumb Bars are a delicious and easy-to-make dessert. The sweet raspberry filling is sandwiched between two layers of buttery, crumbly shortbread. Enjoy these bars with a cup of tea or coffee for a delightful treat.


– 2 cups all-purpose flour
– 1 cup butter, softened
– 1/2 cup granulated sugar
– 1/2 teaspoon salt
– 2 cups fresh raspberries
– 1/2 cup granulated sugar
– 2 tablespoons cornstarch
– 1 teaspoon lemon juice


1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
2. In a medium bowl, combine the flour, butter, 1/2 cup sugar, and salt. Mix until crumbly.
3. Press the mixture into the prepared pan. Bake for 15 minutes.
4. In a medium bowl, combine the raspberries, 1/2 cup sugar, cornstarch, and lemon juice. Mix until combined.
5. Spread the raspberry mixture over the baked crust.
6. Sprinkle the remaining crumb mixture over the raspberry layer.
7. Bake for 25 minutes, or until the top is golden brown.
8. Let cool before cutting into bars.
