– 2 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 2 tablespoons chili powder
– 1 teaspoon garlic powder
– 1 teaspoon cumin
– 1 teaspoon oregano
– 1 teaspoon paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cups cooked brown rice
– 1 can black beans, drained and rinsed
– 1 cup cherry tomatoes, halved
– 1 avocado, diced
– 1/4 cup cilantro, chopped
– Juice of 1 lime
– 2 tablespoons olive oil
– Salt and pepper, to taste


1. In a small bowl, combine the olive oil, chili powder, garlic powder, cumin, oregano, paprika, salt, and pepper.

2. Rub the chicken breasts with the spice mixture and let marinate for at least 30 minutes.

3. Preheat a grill or grill pan to medium-high heat.

4. Grill the chicken for 4-5 minutes per side, or until cooked through.

5. Meanwhile, in a large bowl, combine the cooked brown rice, black beans, cherry tomatoes, avocado, and cilantro.

6. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

7. Pour the dressing over the rice and bean mixture and toss to combine.

8. Divide the rice and bean mixture among four bowls.

9. Top each bowl with a grilled chicken breast.
