This delicious Mango Tiramisu is a twist on the classic Italian dessert. It is made with layers of ladyfingers, mango puree, and a creamy mascarpone cheese mixture. The result is a light and refreshing dessert that is sure to please.
– 2 ripe mangos, peeled and diced
– 2 tablespoons sugar
– 2 tablespoons water
– 2 tablespoons lemon juice
– 1/2 cup mascarpone cheese
– 1/4 cup heavy cream
– 1/4 cup powdered sugar
– 1 teaspoon vanilla extract
– 24 ladyfingers
– 2 tablespoons cocoa powder
1. In a small saucepan, combine the diced mango, sugar, water, and lemon juice. Cook over medium heat for 5 minutes, stirring occasionally.
2. Remove from heat and let cool. Once cooled, puree the mixture in a blender or food processor until smooth.
3. In a medium bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until light and fluffy.
4. Line the bottom of an 8×8 inch baking dish with 12 ladyfingers.
5. Spread half of the mango puree over the ladyfingers.
6. Spread half of the mascarpone mixture over the mango puree.
7. Place the remaining 12 ladyfingers over the mascarpone mixture.
8. Spread the remaining mango puree over the ladyfingers.
9. Spread the remaining mascarpone mixture over the mango puree.
10. Sprinkle the cocoa powder over the top.
11. Cover and refrigerate for at least 2 hours before serving.
