“Lucy & Lentils’ 15-Minute Tomato & Herb Vegan Pasta”

Ingredients:

– 2 tablespoons olive oil
– 1/2 onion, diced
– 2 cloves garlic, minced
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried basil
– 1/4 teaspoon red pepper flakes
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cups cherry tomatoes, halved
– 2 tablespoons tomato paste
– 2 tablespoons vegan butter
– 2 tablespoons nutritional yeast
– 2 cups cooked pasta of choice
– 2 tablespoons chopped fresh parsley

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the oregano, basil, red pepper flakes, salt, and black pepper and cook for 1 minute.

3. Add the cherry tomatoes and tomato paste and cook for 2 minutes.

4. Add the vegan butter and nutritional yeast and stir until melted.

5. Add the cooked pasta and stir to combine.

6. Cook for 2 minutes, stirring occasionally.

7. Remove from heat and stir in the chopped parsley.

8. Serve warm. Enjoy!
