Lemon Coconut Mousse – Matt Adlard
This light and creamy Lemon Coconut Mousse is a delicious and refreshing dessert. The combination of tart lemon and sweet coconut is a perfect balance of flavors. The mousse is easy to make and requires only a few simple ingredients.
* 2 cups heavy cream
* 1/2 cup sugar
* 2 tablespoons lemon juice
* 1 teaspoon lemon zest
* 1/2 cup shredded coconut
1. In a medium bowl, whisk together the heavy cream and sugar until soft peaks form.
2. Add the lemon juice and zest and whisk until combined.
3. Gently fold in the shredded coconut.
4. Divide the mousse into individual serving dishes and chill in the refrigerator for at least 2 hours.
5. Serve chilled.
