Vegan Lemon Bars

These vegan lemon bars are a delicious and easy-to-make dessert. The sweet and tart lemon filling is balanced perfectly with a buttery shortbread crust. Enjoy these vegan lemon bars as a snack or a dessert.


– 2 cups all-purpose flour
– 1/2 cup vegan butter
– 1/4 cup sugar
– 1/4 teaspoon salt
– 2 tablespoons cold water
– 1/2 cup vegan butter
– 1/2 cup sugar
– 2 tablespoons cornstarch
– 1/4 teaspoon salt
– 1/2 cup freshly squeezed lemon juice
– 2 tablespoons lemon zest


1. Preheat oven to 350°F.
2. In a medium bowl, combine the flour, 1/2 cup vegan butter, 1/4 cup sugar, and 1/4 teaspoon salt.
3. Using a pastry blender or two knives, cut the butter into the flour mixture until it resembles coarse crumbs.
4. Add the cold water and mix until the dough comes together.
5. Press the dough into an 8×8 inch baking pan.
6. Bake for 15 minutes, or until lightly golden.
7. In a medium saucepan, melt the 1/2 cup vegan butter over medium heat.
8. Add the sugar, cornstarch, and salt and stir until combined.
9. Add the lemon juice and zest and stir until combined.
10. Bring the mixture to a boil, stirring constantly.
11. Reduce the heat and simmer for 2 minutes, stirring constantly.
12. Pour the lemon mixture over the baked crust.
13. Bake for 20 minutes, or until the top is lightly golden.
14. Let cool completely before cutting into bars.
