Authentic Chicken Curry (Easy Chicken Salan)

Ingredients:

– 2 tablespoons vegetable oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground ginger
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon garam masala
– 1 teaspoon turmeric
– 1 teaspoon chili powder
– 1/2 teaspoon ground black pepper
– 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
– 1 (14.5 ounce) can diced tomatoes
– 1 (14.5 ounce) can coconut milk
– 1/4 cup chopped fresh cilantro
– Salt to taste

Instructions:

1. Heat the oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the ginger, cumin, coriander, garam masala, turmeric, chili powder, and black pepper and cook for 1 minute.
