Homemade Cream of Chicken Soup
This creamy, comforting soup is a classic favorite. It’s easy to make and can be served as a main course or as a side dish. The combination of chicken, vegetables, and cream makes for a delicious and satisfying meal.
Ingredients:
– 2 tablespoons butter
– 1 onion, diced
– 2 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 2 tablespoons all-purpose flour
– 4 cups chicken broth
– 2 cups cooked chicken, shredded
– 1/2 teaspoon dried thyme
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried basil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/2 cup heavy cream
Instructions:
1. In a large pot, melt the butter over medium heat.
2. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
3. Add the flour and stir to combine.
4. Slowly add the chicken broth, stirring constantly.
5. Add the chicken, thyme, oregano, basil, salt, and pepper and stir to combine.
6. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes.
7. Stir in the cream and simmer for an additional 5 minutes.
8. Serve hot.
