Heavenly Raw Vegan Banana Cream Pie
Ingredients:
– 2 cups raw cashews, soaked overnight
– 2 ripe bananas
– 1/4 cup coconut oil
– 1/4 cup maple syrup
– 1 teaspoon vanilla extract
– 1/4 teaspoon sea salt
– 1/2 cup coconut cream
– 1/4 cup almond milk
– 1/4 cup coconut sugar
– 1/4 cup almond flour
– 1/4 cup coconut flour
– 1/4 cup coconut flakes
– 1/4 cup chopped walnuts
– 1/4 cup chopped pecans
– 1/4 cup raisins
– 1/4 cup dates, chopped
Instructions:
1. Drain and rinse the soaked cashews and place them in a food processor. Process until the cashews are broken down into a creamy paste.
2. Add the bananas, coconut oil, maple syrup, vanilla extract, and sea salt to the food processor and process until everything is combined and smooth.
3. In a separate bowl, whisk together the coconut cream, almond milk, coconut sugar, almond flour, and coconut flour until combined.
4. Add the wet ingredients to the food processor and process until everything is combined and smooth.
5. Grease a 9-inch pie dish with coconut oil.
6. Pour the banana cream mixture into the pie dish and spread it out evenly.
7. Sprinkle the coconut flakes, walnuts, pecans, raisins, and dates over the top of the pie.
8. Place the pie in the refrigerator and let it chill for at least 4 hours before serving. Enjoy!
