The BEST Caramel Layer Cake
This Caramel Layer Cake is the perfect combination of moist and fluffy cake layers, creamy caramel frosting, and a crunchy caramel topping. It’s sure to be a hit at any gathering!
Ingredients:
– 2 1/2 cups all-purpose flour
– 2 teaspoons baking powder
– 1 teaspoon baking soda
– 1 teaspoon salt
– 1 cup (2 sticks) butter, softened
– 2 cups granulated sugar
– 4 large eggs
– 1 cup buttermilk
– 2 teaspoons vanilla extract
– 1/2 cup caramel sauce
– 2 cups heavy cream
– 1/2 cup powdered sugar
– 1/2 cup chopped toasted pecans
Instructions:
1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition.
5. Add the buttermilk and vanilla extract and mix until combined.
6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
7. Divide the batter evenly between the two prepared pans.
8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
10. To make the frosting, beat the heavy cream and powdered sugar until stiff peaks form.
11. Spread half of the frosting over one of the cooled cake layers.
12. Drizzle the caramel sauce over the frosting.
13. Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
14. Sprinkle the chopped toasted pecans over the top of the cake.
