Hearty Vegan Garlic Chickpea Soup

Vegan Garlic Chickpea Soup

Ingredients:

– 2 tablespoons olive oil
– 1 onion, diced
– 4 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 2 teaspoons ground cumin
– 1 teaspoon smoked paprika
– 1 teaspoon dried oregano
– 1/2 teaspoon ground coriander
– 1/4 teaspoon ground turmeric
– 1/4 teaspoon ground cinnamon
– 1/4 teaspoon ground black pepper
– 4 cups vegetable broth
– 2 (15-ounce) cans chickpeas, drained and rinsed
– 2 cups baby spinach
– 2 tablespoons freshly squeezed lemon juice
– Salt, to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the carrots and celery and cook for another 5 minutes.

3. Add the cumin, smoked paprika, oregano, coriander, turmeric, cinnamon, and black pepper and cook for 1 minute.

4. Add the vegetable broth and chickpeas and bring to a boil. Reduce the heat to low and simmer for 15 minutes.

5. Add the spinach and lemon juice and cook for another 5 minutes.

6. Season with salt, to taste.

7. Serve hot. Enjoy!
