Simple Soup

This simple soup is a great way to warm up on a cold day. It’s easy to make and requires only a few ingredients. It’s also a great way to use up any vegetables you have in the fridge.


– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 4 cups vegetable broth
– 2 cups diced potatoes
– 1 teaspoon dried thyme
– Salt and pepper, to taste
– 2 cups chopped spinach


1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the carrots and celery and cook for another 5 minutes.
4. Pour in the vegetable broth and add the potatoes.
5. Bring to a boil, then reduce the heat and simmer for 15 minutes.
6. Add the thyme, salt, and pepper.
7. Add the spinach and cook for another 5 minutes.
8. Serve warm.
