One Pot Beef Stroganoff
This One Pot Beef Stroganoff is a hearty and comforting meal that is easy to make and requires minimal clean up. It is a great weeknight dinner that the whole family will love.
Ingredients:
* 1 tablespoon olive oil
* 1 pound lean ground beef
* 1 onion, diced
* 2 cloves garlic, minced
* 1 teaspoon paprika
* 1 teaspoon dried oregano
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons tomato paste
* 2 cups beef broth
* 8 ounces egg noodles
* 1/2 cup sour cream
* 2 tablespoons chopped fresh parsley
Instructions:
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the ground beef and cook until browned, about 5 minutes.
3. Add the onion, garlic, paprika, oregano, thyme, salt, and pepper. Cook until the onion is softened, about 5 minutes.
4. Stir in the tomato paste and beef broth.
5. Add the egg noodles and bring the mixture to a boil.
6. Reduce the heat to low and simmer, stirring occasionally, until the noodles are cooked through, about 10 minutes.
7. Remove the pot from the heat and stir in the sour cream and parsley.
8. Serve warm.
