Vegan Banana Bread


– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup coconut oil, melted
– 1/2 cup pure maple syrup
– 2 teaspoons pure vanilla extract
– 3 ripe bananas, mashed
– 1/2 cup chopped walnuts (optional)


1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with coconut oil and set aside.

2. In a medium bowl, whisk together the flour, baking soda and salt.

3. In a separate bowl, mix together the melted coconut oil, maple syrup, and vanilla extract.

4. Add the mashed bananas to the wet ingredients and mix until combined.

5. Add the wet ingredients to the dry ingredients and mix until just combined.

6. Fold in the chopped walnuts, if using.

7. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
