Vegan Mac and Cheese
-1/2 cup vegan butter
-1/4 cup all-purpose flour
-3 cups unsweetened almond milk
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/2 teaspoon smoked paprika
-1/2 teaspoon sea salt
-1/4 teaspoon ground black pepper
-2 cups vegan cheddar cheese
-1/2 cup nutritional yeast
-1/2 pound elbow macaroni
1. Preheat oven to 350 degrees F.
2. In a large saucepan, melt the vegan butter over medium heat.
3. Add the flour and whisk until combined.
4. Slowly add the almond milk, whisking constantly until the mixture is smooth.
5. Add the garlic powder, onion powder, smoked paprika, sea salt, and black pepper.
6. Cook for 5 minutes, stirring occasionally.
7. Add the vegan cheddar cheese and nutritional yeast and stir until melted.
8. Remove from heat and set aside.
9. Cook the macaroni according to package instructions.
10. Drain the macaroni and add it to the cheese sauce.
11. Pour the macaroni and cheese into a 9×13 inch baking dish.
12. Bake for 25 minutes, or until the top is golden brown.
13. Serve warm and enjoy!
