Easy Chicken Paella Recipe

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
- 1 lemon, cut into wedges
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell pepper, paprika, cumin, oregano, salt, black pepper, and red pepper flakes. Cook for another 2 minutes.
- Add the rice and stir to coat with the spices. Pour in the chicken broth and bring to a boil.
