  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking soda

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 2 tablespoons freshly squeezed lemon juice


  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, oats, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg, vanilla extract, lemon zest, and lemon juice until combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Drop the dough by rounded tablespoons onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  6. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
