Baked Chicken Taquitos
These Baked Chicken Taquitos are a delicious and easy-to-make Mexican-inspired dish. They are made with chicken, cheese, and spices, all wrapped in a crispy tortilla shell. They are perfect for a quick weeknight dinner or as an appetizer for a party.
Ingredients:
- 2 cups cooked, shredded chicken
- 1/2 cup shredded cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 12 small flour tortillas
- 1/4 cup olive oil
Instructions:
- Preheat oven to 375°F.
- In a large bowl, combine the chicken, cheese, onion, bell pepper, garlic powder, chili powder, cumin, salt, pepper, and cilantro. Mix until all ingredients are evenly distributed.
- Lay out the tortillas and spoon about 2 tablespoons of the chicken mixture onto each tortilla. Roll up the tortillas and place them seam-side down on a baking sheet.
- Brush the tops of the taquitos with olive oil. Bake for 15-20 minutes, or until the taquitos are golden brown and crispy.
- Serve with your favorite toppings, such as sour cream, guacamole, salsa, or hot sauce.
