“Crispy Cucumber Snails with Garden Vegetable Dip: A Handmade Charlotte Recipe”

Ingredients:

– 2 cucumbers
– 2 tablespoons of olive oil
– 1 teaspoon of garlic powder
– 1 teaspoon of onion powder
– 1 teaspoon of dried oregano
– 1 teaspoon of dried basil
– 1/2 teaspoon of salt
– 1/4 teaspoon of black pepper
– Garden Vegetable Dip (see recipe below)

Instructions:

1. Preheat oven to 375°F.

2. Slice cucumbers into 1/4 inch thick slices.

3. Place cucumber slices on a baking sheet lined with parchment paper.

4. Drizzle olive oil over cucumber slices and sprinkle with garlic powder, onion powder, oregano, basil, salt, and pepper.

5. Bake for 15 minutes, or until cucumber slices are golden brown.

6. Serve with Garden Vegetable Dip.

Garden Vegetable Dip:

Ingredients:

– 1/2 cup of plain Greek yogurt
– 1/4 cup of mayonnaise
– 1/4 cup of finely chopped celery
– 1/4 cup of finely chopped carrots
– 1/4 cup of finely chopped red bell pepper
– 1 tablespoon of fresh lemon juice
– 1 teaspoon of garlic powder
– 1 teaspoon of onion powder
– 1 teaspoon of dried oregano
– 1 teaspoon of dried basil
– 1/2 teaspoon of salt
– 1/4 teaspoon of black pepper

Instructions:

1. In a medium bowl, combine Greek yogurt, mayonnaise, celery, carrots, red bell pepper, lemon juice, garlic powder, onion powder, oregano, basil, salt, and pepper.

2. Mix until all ingredients are well combined.

3. Serve with Cucumber Snails.
