Chickpea Vegetable Nuggets

These Chickpea Vegetable Nuggets are a delicious and healthy alternative to traditional chicken nuggets. They are packed with protein and vegetables, and are a great way to get your kids to eat their veggies. They are easy to make and can be served as a main dish or as a side.

Ingredients:

* 1 can chickpeas, drained and rinsed
* 1/2 cup cooked vegetables (such as carrots, peas, or corn)
* 1/4 cup breadcrumbs
* 1/4 cup grated Parmesan cheese
* 1 teaspoon garlic powder
* 1 teaspoon onion powder
* 1/2 teaspoon dried oregano
* 1/2 teaspoon dried basil
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons olive oil

Instructions:

1. Preheat oven to 375°F.
2. In a food processor, combine chickpeas, cooked vegetables, breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper. Pulse until ingredients are combined and mixture is slightly chunky.
3. Form mixture into small nugget shapes and place on a baking sheet lined with parchment paper.
4. Drizzle olive oil over nuggets and bake for 20-25 minutes, or until golden brown.
5. Serve warm with your favorite dipping sauce.
