Ingredients:

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 pound mushrooms, sliced
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken cubes and season with salt and pepper. Cook for 5 minutes, stirring occasionally, until the chicken is golden brown.
  3. Add the white wine, chicken broth, heavy cream, thyme, oregano, and garlic powder. Stir to combine and bring to a simmer.
  4. Add the mushrooms and cook for 5 minutes, stirring occasionally, until the mushrooms are tender.
  5. Stir in the butter and parsley and cook for 1 minute, stirring constantly, until the butter is melted.
  6. Serve over rice, pasta, or mashed potatoes.
