Cream of Chicken Soup

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked chicken, diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream


  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Add the chicken broth, chicken, thyme, oregano, basil, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  5. Stir in the cream and cook for an additional 5 minutes.
  6. Serve hot.
