  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste


  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes.
  2. Add the onion, garlic, and bell pepper and cook until the vegetables are softened, about 5 minutes.
  3. Add the ginger, turmeric, cumin, coriander, curry powder, and cayenne pepper and cook for 1 minute.
  4. Add the tomatoes and coconut milk and bring to a simmer. Reduce the heat to low and simmer for 15 minutes.
  5. Stir in the cilantro and season with salt and pepper to taste.
  6. Serve over rice or noodles.
