Coconut-Kissed Thai Chicken Curry

Thai Chicken Coconut Curry

This Thai Chicken Coconut Curry is a delicious and flavorful dish that is sure to please. It is made with chicken, coconut milk, and a variety of spices, and is sure to be a hit with your family and friends.


– 2 tablespoons vegetable oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, minced
– 1 teaspoon ground coriander
– 1 teaspoon ground cumin
– 1 teaspoon turmeric
– 1 teaspoon curry powder
– 1/2 teaspoon ground cardamom
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon cayenne pepper
– 2 boneless, skinless chicken breasts, cut into cubes
– 1 can (14 ounces) coconut milk
– 1/2 cup chicken broth
– 2 tablespoons fish sauce
– 2 tablespoons brown sugar
– 1/4 cup fresh cilantro, chopped
– Salt and pepper, to taste


1. Heat the oil in a large skillet over medium-high heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the ginger, coriander, cumin, turmeric, curry powder, cardamom, cinnamon, and cayenne pepper and cook for 1 minute.
4. Add the chicken and cook until lightly browned, about 5 minutes.
5. Add the coconut milk, chicken broth, fish sauce, and brown sugar and bring to a simmer.
6. Reduce the heat to low and simmer for 10 minutes.
7. Add the cilantro and season with salt and pepper, to taste.
8. Serve over cooked rice or noodles.
