Coconut Chickpea Curry

– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground ginger
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon turmeric
– 1 teaspoon garam masala
– 1/2 teaspoon cayenne pepper
– 1 can (14 ounces) chickpeas, drained and rinsed
– 1 can (14 ounces) coconut milk
– 1/2 cup vegetable broth
– 1/4 cup chopped fresh cilantro
– Salt and pepper, to taste


1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the ginger, cumin, coriander, turmeric, garam masala, and cayenne pepper and cook for 1 minute.
4. Add the chickpeas, coconut milk, and vegetable broth and bring to a simmer.
5. Simmer for 10 minutes, stirring occasionally.
6. Add the cilantro and season with salt and pepper, to taste.
7. Serve over cooked rice.
