– 2 tablespoons olive oil
– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
– 1 onion, diced
– 8 ounces mushrooms, sliced
– 2 cloves garlic, minced
– 2 tablespoons all-purpose flour
– 1 teaspoon paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup chicken broth
– 1/2 cup sour cream
– 2 tablespoons chopped fresh parsley
– 8 ounces egg noodles


1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken and cook until golden brown, about 5 minutes.
3. Add the onion, mushrooms, and garlic and cook until the vegetables are softened, about 5 minutes.
4. Stir in the flour, paprika, salt, and pepper and cook for 1 minute.
5. Add the chicken broth and bring to a simmer.
6. Reduce the heat to low and stir in the sour cream.
7. Simmer for 5 minutes, stirring occasionally.
8. Meanwhile, cook the egg noodles according to package instructions.
9. Serve the stroganoff over the egg noodles and garnish with parsley.
