Pumpkin Cookies with Brown Butter Icing

These delicious pumpkin cookies are made with a combination of pumpkin puree, spices, and brown butter icing for a unique and flavorful treat. Perfect for the fall season, these cookies are sure to be a hit with family and friends.

Ingredients:

* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground cloves
* 1/2 teaspoon salt
* 1/2 cup (1 stick) unsalted butter, softened
* 1 cup granulated sugar
* 1/2 cup packed light brown sugar
* 1 cup pumpkin puree
* 1 large egg
* 1 teaspoon pure vanilla extract
* 1/2 cup chopped walnuts (optional)
* 1/2 cup raisins (optional)

Brown Butter Icing:

* 1/2 cup (1 stick) unsalted butter
* 2 cups confectioners’ sugar
* 2 tablespoons milk
* 1 teaspoon pure vanilla extract

Instructions:

1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
3. In a large bowl, beat the butter and sugars together until light and fluffy.
4. Add the pumpkin puree, egg, and vanilla extract and mix until combined.
5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
6. Fold in the walnuts and raisins, if using.
7. Drop the dough by rounded tablespoons onto the prepared baking sheets.
8. Bake for 12-14 minutes, or until the edges are lightly golden.
9. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
10. To make the icing, melt the butter in a small saucepan over medium heat. Cook, stirring occasionally, until the butter is golden brown and has a nutty aroma.
11. Remove from heat and let cool for 5 minutes.
12. In a medium bowl, whisk together the confectioners’ sugar, milk, and vanilla extract.
13. Slowly add the browned butter and whisk until smooth.
14. Spread the icing over the cooled cookies.
