Banoffee Pie
Banoffee Pie is a classic British dessert that combines a crunchy biscuit base with a creamy toffee filling and is topped with fresh bananas and whipped cream. It’s a delicious and easy-to-make treat that is sure to please everyone.
Ingredients:
– 250g digestive biscuits
– 100g butter, melted
– 397g tin of condensed milk
– 2-3 bananas
– 300ml double cream
– 2 tablespoons icing sugar
– 1 teaspoon vanilla extract
Instructions:
1. Preheat the oven to 180°C/350°F/Gas Mark 4.
2. Place the digestive biscuits in a food processor and blitz until they form a fine crumb.
3. Add the melted butter and mix until combined.
4. Tip the biscuit mixture into a 20cm/8in springform tin and press down firmly with the back of a spoon.
5. Bake in the preheated oven for 10 minutes.
6. Remove from the oven and allow to cool.
7. Pour the condensed milk into a saucepan and heat gently until it starts to thicken.
8. Pour the condensed milk over the biscuit base and spread evenly.
9. Slice the bananas and arrange them over the condensed milk.
10. Whip the cream, icing sugar and vanilla extract together until it forms soft peaks.
11. Spread the cream over the bananas.
12. Place in the fridge for at least 2 hours before serving.
