These Pumpkin Cheesecake Bars are a delicious and easy-to-make dessert that is perfect for the fall season. The creamy cheesecake layer is topped with a spiced pumpkin layer and a crunchy streusel topping. Enjoy these bars with a cup of coffee or tea for a cozy autumn treat.

Ingredients:

– 1/2 cup butter, melted
– 1 1/2 cups graham cracker crumbs
– 1/4 cup sugar
– 8 ounces cream cheese, softened
– 1/2 cup sugar
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1/4 teaspoon ground allspice
– 2 eggs
– 1 cup canned pumpkin
– 1/4 cup sour cream
– 1/4 cup chopped pecans

Instructions:

1. Preheat oven to 350°F. Grease an 8×8-inch baking pan.
2. In a medium bowl, combine melted butter, graham cracker crumbs, and 1/4 cup sugar. Press mixture into the bottom of the prepared pan.
3. In a large bowl, beat cream cheese, 1/2 cup sugar, vanilla, cinnamon, nutmeg, ginger, and allspice until smooth. Beat in eggs one at a time.
4. Spread cream cheese mixture over the graham cracker crust.
5. In a medium bowl, combine pumpkin, sour cream, and pecans. Spread over cream cheese layer.
6. Bake for 30 minutes, or until center is set. Cool completely before cutting into bars.
