* 2 cups cooked quinoa
* 2 tablespoons olive oil
* 1 red bell pepper, diced
* 1 cup frozen corn
* 1 can black beans, drained and rinsed
* 1 teaspoon chili powder
* 1 teaspoon cumin
* 1/2 teaspoon garlic powder
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup chopped fresh cilantro
1. Heat the olive oil in a large skillet over medium heat.
2. Add the bell pepper and cook for 3 minutes, stirring occasionally.
3. Add the corn and cook for an additional 2 minutes.
4. Add the black beans, chili powder, cumin, garlic powder, salt, and pepper. Stir to combine.
5. Cook for an additional 2 minutes, stirring occasionally.
6. Add the cooked quinoa and cilantro and stir to combine.
7. Cook for an additional 2 minutes, stirring occasionally.
