Ingredients:

– 1 pound ground beef
– 1 onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 8-10 flour tortillas
– 2 cups shredded cheese
– 2 cups green sauce (see recipe below)

Green Sauce:

– 2 cups tomatillos, husked and rinsed
– 2 jalapenos, seeded and diced
– 1/2 cup cilantro, chopped
– 1/2 cup onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 cup chicken broth

Instructions:

1. Preheat oven to 350 degrees F.
2. In a large skillet, cook the ground beef, onion, garlic, cumin, chili powder, salt, and pepper over medium-high heat until the beef is cooked through.
3. To make the green sauce, combine the tomatillos, jalapenos, cilantro, onion, garlic, cumin, salt, pepper, and chicken broth in a blender or food processor and blend until smooth.
4. To assemble the enchiladas, spread 1/2 cup of the green sauce in the bottom of a 9×13 inch baking dish.
5. Place a tortilla on a flat surface and spread 1/4 cup of the beef mixture down the center. Top with 1/4 cup of the cheese and 1 tablespoon of the green sauce. Roll up the tortilla and place it seam side down in the baking dish. Repeat with the remaining tortillas.
6. Pour the remaining green sauce over the enchiladas and top with the remaining cheese.
7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
8. Serve with Mexican rice and beans.
