Instructions:

  1. In a large skillet over medium-high heat, cook the ground beef until it is no longer pink. Drain off any excess fat.
  2. Add the onion, garlic, bell pepper, and jalapeno pepper to the skillet and cook until the vegetables are softened, about 5 minutes.
  3. Stir in the cumin, chili powder, oregano, paprika, salt, black pepper, and cayenne pepper. Cook for 1 minute.
  4. Add the diced tomatoes, tomato sauce, and water. Stir to combine.
  5. Add the potatoes and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.
  6. Stir in the cilantro and cook for an additional 5 minutes.
  7. Serve hot.
